
During my recent media tour of the Headwaters Region, media stayed at the Hockley Valley Resort in the Town of Mono, just outside of Orangeville. Nancy and Mario Adamo purchased a small 28-room hotel tucked into the hills of Hockley Valley in 1985 with a vision. That vision was realized and now the resort offers deluxe suites, a championship 18-hole golf course, an outdoor pool, a Grand Ballroom, a conference centre, ski hills, restaurants, bar and an 8,000 square foot spa.


The spa offers an endless list of services and treatments including massages, body wraps, facials, masks, IPL Laser – Photo Rejuvenation, hair removal, waxing, Reiki, reflexology, pedicures and manicures.
The spacious and beautiful Montclair Ballroom is the perfect space to host your wedding reception whether you are hosting an intimate celebration or a large wedding of up to 360 guests.
Cabin Restaurant combines rustic and modern design. The atmosphere was warm, romantic and elegant. The restaurant layout gives guests the ability to connect with the chefs while enjoying a diverse sampling of local fare exemplifying the farm-to-table philosophy.
Hockley Valley Resort uses only the freshest fruits and vegetables from their two-acre onsite farm, along with products from local farmers.
The first appetizer we were served during our dinner was Asparagus Salad with beets and greens. The salad was delicious, the asparagus was super fresh and provided a delightful contrast to the sweet beets.


Our second appetizer was a Cheese Ravioli with fiddleheads, peas, ramps, asparagus and cream. This dish was another culinary winner blending a range of textures and tastes.
I have to say that the dinner menu was divine and delicious from starter to dessert.

The main course was Ontario harvest beef tenderloin with parsnip crema, walnut hill bacon lardons and confit foraged mushrooms………….yum…….yum.

Dessert was a Rhubarb & Strawberry Panna Cotta with white chocolate popcorn. This was a great end to a delicious meal since the panna cotta was light and not too sweet.

If you’re planning to come up to Caledon for the Pan Am Games this summer, definitely consider staying at Hockley Valley Resort. You won’t be disappointed.
I love fiddleheads. I don’t often see them offered on a menu when I eat out, so it makes Cabin Restaurant stand out to me. I’ve never heard of white chocolate popcorn. What a creative dessert!
